Vegan Chocolate Chip Cookie Fries

Served at Walt Disney World’s Beaches and Cream Soda Shop

These vegan cookie “fries” are on the menu at Disney’s Beach Club Resort
in the Beaches and Cream Soda Shop at Walt Disney World. Disney has shared the
recipe with guests so now you can make these biscotti style “fries” at
home.  A great way to get excited after booking a trip to Disney is to
make some of their recipes in the weeks before your vacation or after returning
home from vacation to keep those memories going.  

For many guests with dietary preferences, knowing  the spots to get
allergy friendly foods before traveling makes vacationing so much easier. 
And Disney does a great job at helping to provide the ingredient information
for all their foods whether you are dining at a sit down restaurant, quick
service or a food cart in the parks or at Disney Springs.

This plant based vegan recipe was published in VegNews but I have adapted it
to make it gluten free as well.  It is not overly sweet and is perfect for
dipping vegan chocolate sauce or a fruit sauce such as strawberry or raspberry.
Or, you can dunk in your favorite cup of coffee. 

Ingredients 

2 3/4 cups of all purpose flour ( I used one to one Gluten free flour)
1/2 cup plus 1 tablespoon powdered sugar 
1/2 cup plus 1 tablespoon vegan butter ( I recommend Earth Balance) 
7 tablespoons warm water
5 tablespoons liquid egg substitute (Just Egg used in Disney) 
1 tablespoon molasses
1/2 cup vegan mini chocolate chips (I used Enjoy Life Brand its allergy
friendly)

Procedure 

In the bowl of an electric mixer fitted with a paddle attachment, add flour,
powdered sugar, and margarine. Beat on medium speed until combined. 

In a small bowl, combine warm water and egg substitute. Add egg mixture and
molasses to mixer on medium speed until smooth. Fold in chocolate chips. 

Place batter into an 8X8 inch pan and refrigerate for 30 minutes. 

Preheat the oven to 325 degrees. Line two baking sheets with parchment
paper. After 30 minutes, cut in half and lift out onto a cutting board. Cut
into 32 strips each 1/4 inch wide by 4 inches long. Place 16 strips on each baking
sheet and bake for 20-22 minutes until golden. 

Serve with your favorite dipping sauce.
